This yummy taco bowl, is light, nourishing and oh so filling. This recipe is enough to feed 4-5 people or servings so keep that in mind when you are meal prepping. If you want to make more for 2 adults for the week then I would suggest doubling the recipe and it comes out lovely!
Taco Bowls
Servings: 4 servings
Ingredients
- 1 lb grass fed organic ground beef
- 1 can black beans drained and rinsed
- 1 avocado
- 2 cups shredded/sliced organic romaine lettuce,
- 1 bell pepper chopped
- 1/2 onion chopped
- 1 tsp paprika
- 1 tsp cumin
- 2 tsp onion powder
- 2 tsp garlic powder
- 1/2 cup salsa
- salt and pepper
- 1 cup organic brown rice or quinoa
- 4 tbsp coconut aminos
Instructions
- Cook the rice or quinoa according to package directions
- Heat pan over medium high heat and spray with avocado oil.
- Add ground beef to the pan and cook until browned.
- Season beef with seasonings (paprika, cumin, onion powder, garlic powder, salt and pepper. Set beef aside.
- In a pan add the bell pepper and onion and sauté for 5 minutes until tender.
- Divide up in 4 bowls. Start with the 1/4 cup of rice/quinoa. Add cooked beef, sauteed veggies, black beans and lettuce.
- Top with avocado slices, salsa and a drizzle of coconut aminos.
