Taco Bowl

This yummy taco bowl, is light, nourishing and oh so filling. This recipe is enough to feed 4-5 people or servings so keep that in mind when you are meal prepping. If you want to make more for 2 adults for the week then I would suggest doubling the recipe and it comes out lovely!

Ingredients

  • 1 lb grass fed organic ground beef
  • 1 can black beans drained and rinsed
  • 1 avocado
  • 2 cups shredded/sliced organic romaine lettuce,
  • 1 bell pepper chopped
  • 1/2 onion chopped
  • 1 tsp paprika
  • 1 tsp cumin
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 cup salsa
  • salt and pepper
  • 1 cup organic brown rice or quinoa
  • 4 tbsp coconut aminos

Instructions

  • Cook the rice or quinoa according to package directions
  • Heat pan over medium high heat and spray with avocado oil.
  • Add ground beef to the pan and cook until browned.
  • Season beef with seasonings (paprika, cumin, onion powder, garlic powder, salt and pepper. Set beef aside.
  • In a pan add the bell pepper and onion and sauté for 5 minutes until tender.
  • Divide up in 4 bowls. Start with the 1/4 cup of rice/quinoa. Add cooked beef, sauteed veggies, black beans and lettuce.
  • Top with avocado slices, salsa and a drizzle of coconut aminos.
