Lemon Coconut Energy Balls

Energy balls are one of my fav’s and a convenient and nutritious snack, especially for those mid-afternoon slumps. Packed with high-fat ingredients, these little powerhouses provide sustained energy, making them an ideal choice for a snack.

One of the key benefits of energy balls made with dates is their natural sweetness, which helps satisfy sugar cravings without the crash associated with refined sugars. Dates are rich in fiber, providing an excellent source of energy and aiding digestion.

Additionally, incorporating chia seeds enhances the nutritional profile of energy balls. Chia seeds are a fantastic source of omega-3 fatty acids, which support heart health, and they offer a small amount of protein and great source of fiber, keeping you full longer and stabilizing blood sugar levels.

Lemon Coconut Chia Energy Balls

Prep Time15 minutes

Ingredients

  • 2 cups chopped raw cashews
  • 10 Medjool dates pitted
  • 1/2 cup shredded unsweetened coconut
  • 1 tbsp lemon zest about 1 lemon
  • 1/2 tbsp lemon juice
  • 1 tbsp chia seeds
  • Pinch of salt

Instructions

  • Add cashews in a high-speed blender and process on high until your cashews have turned into cashew meal.
  • Add in the rest of the ingredients (other than the chia seeds) and process on high until a sticky dough has formed.
  • Next add in chia seeds and pulse until combined.
  • Once your dough is sticky, use a tablespoon cookie scoop and form into balls. If you find your dough isn’t sticky enough to form the balls, add more lemon juice.
  • Store in fridge or freezer for longer store.
