Healthy Ground Beef Minestrone Soup

Equipment

  • 1 large pot

Ingredients

  • 6 tbsp olive oil
  • 1 lb grass fed organic ground beef
  • 1 yellow onion chopped
  • 3 carrots chopped
  • 3 celery stalks chopped
  • 4 cloves minced garlic
  • 1 28oz can crushed tomatoes
  • 2 tbsp parsley
  • 1 15oz can cannellini beans drained and rinsed
  • 1 15oz can chickpeas drained and rinsed
  • 4 cups veggie/beef broth bone broth for extra protein
  • 2-4 cups filtered water
  • 1 cup gluten free pastina or 1 1/2 cups gf farfalle pasta
  • salt and pepper to taste
  • pecorino cheese/nutritional yeast flakes for toppin

Instructions

  • Chop onions using a food processor. Add celery and carrots to food processor or slice separate.
  • In a large heavy bottomed pot, heat 3 tbsp of olive oil
  • Add ground beef and break up meat while cooking.
  • Add onions, carrots, celery. Sauté for 5-7 mins then add tomatoes.
  • Add garlic and parsley, salt and pepper to taste and cook for 2 minutes.
  • Add in beans, broth and water. Increase to high heat and bring to a boil.
  • Once boiling, add pasta and cook according to package directions. Then take off heat.
  • If soup is too thick, add 1-2 cups of water and stir.
  • Distribute to individual bowls and top with pecorino cheese.
