Warm up with a bowl of our family favorite – Healthy Beef Minestrone Soup!
This nourishing soup is perfect for cozy season and it combines grass fed lean beef and loads of fiber from vegetables and beans, creating a nourishing meal that’s both satisfying and balanced. Healthy Beef Minestrone Soup
Equipment
- 1 large pot
Ingredients
- 6 tbsp olive oil
- 1 lb grass fed organic ground beef
- 1 yellow onion chopped
- 3 carrots chopped
- 3 celery stalks chopped
- 4 cloves minced garlic
- 1 28oz can crushed tomatoes
- 2 tbsp parsley
- 1 15oz can cannellini beans drained and rinsed
- 1 15oz can chickpeas drained and rinsed
- 4 cups veggie/beef broth bone broth for extra protein
- 2-4 cups filtered water
- 1 cup gluten free pastina or 1 1/2 cups gf farfalle pasta
- salt and pepper to taste
- pecorino cheese/nutritional yeast flakes for toppin
Instructions
- Chop onions using a food processor. Add celery and carrots to food processor or slice separate.
- In a large heavy bottomed pot, heat 3 tbsp of olive oil
- Add ground beef and break up meat while cooking.
- Add onions, carrots, celery. Sauté for 5-7 mins then add tomatoes.
- Add garlic and parsley, salt and pepper to taste and cook for 2 minutes.
- Add in beans, broth and water. Increase to high heat and bring to a boil.
- Once boiling, add pasta and cook according to package directions. Then take off heat.
- If soup is too thick, add 1-2 cups of water and stir.
- Distribute to individual bowls and top with pecorino cheese.
