Chop onions using a food processor. Add celery and carrots to food processor or slice separate.
In a large heavy bottomed pot, heat 3 tbsp of olive oil
Add ground beef and break up meat while cooking.
Add onions, carrots, celery. Sauté for 5-7 mins then add tomatoes.
Add garlic and parsley, salt and pepper to taste and cook for 2 minutes.
Add in beans, broth and water. Increase to high heat and bring to a boil.
Once boiling, add pasta and cook according to package directions. Then take off heat.
If soup is too thick, add 1-2 cups of water and stir.
Distribute to individual bowls and top with pecorino cheese.
