Fruit Platter with Coconut Whipped Cream
Ingredients
- 1 15oz can organic coconut cream refrigerated for 24 hours
- 1/2 tsp vanilla
- 1 tbsp maple syrup
- 1 cup organic blueberries
- 1 cup organic grapes
- 1 cup organic sliced apples
- 1 cup cantaloupe chunks
Instructions
- Open can of coconut cream and scoop out the cream solids only and place in a bowl.
- Using a stand mixer with paddle attachment or handheld mixer, start whipping the coconut cream.
- Add the vanilla and maple syrup and whip for about 2 minutes until it becomes fluffy.
- Transfer to a small serving dish and serve with fruit.
