Banana Cream Pie Chia Pudding

Banana Cream Pie Chia Pudding

Prep Time5 minutes

Ingredients

  • 2/3 cup unsweetened coconut/almond milk
  • 1/2 cup coconut cream from can
  • 1/4 cup chia seeds
  • 1 tbsp cashew butter or mixed nut butter
  • 2 scoops vanilla protein powder
  • 1 banana
  • pinch salt
  • 2 tsp maca powder optional for hormones/mood

Instructions

  • Add all the ingredients except for chia seeds to a blender and blend until smooth.
  • Transfer to a bowl and stir in chia seeds. Let it sit in the fridge for at 3 hours up to overnight. Try to give it a stir half way through, to avoid clumping.
  • To get the "banana cream pie like vibes", add 1-2 tbsp of coconut cream to a bowl and whip with a handheld mixer until light and fluffy. Once chia pudding is done setting and your ready to eat, add a dollop to top your pudding along with a sprinkle of hemp seeds and sliced bananas.
