Homemade Mayo
Servings: 8 servings
Ingredients
- 1 egg yolk
- 1 tsp lemon juice
- 1/4 tsp dijon mustard
- 1 tsp cold water
- 1/4 tsp salt
- 3/4 cup avocado oil
Instructions
- Whisk together egg yolk, lemon juice, mustard, water and salt until frothy.
- Pour avocado oil in slowly while whisking constantly until the mayo begins to thicken. Once this happens you can add the oil in a thin stream, whisking until combined.
- Keeps fresh for up to a week in the fridge and tastes best within a few days.
Notes
For Chipotle mayo – follow the mayo base recipe instructions above then add in:
- 1 tsp lime juice
- 1 tsp chopped chives
- 1 tsp garlic powder
- 1 tbsp adobo sauce
