Homemade Mayo (plus flavor variations)

I also have a variation to make Chipotle mayo in the notes section of this recipe.

Homemade Mayo

Ingredients

  • 1 egg yolk
  • 1 tsp lemon juice
  • 1/4 tsp dijon mustard
  • 1 tsp cold water
  • 1/4 tsp salt
  • 3/4 cup avocado oil

Instructions

  • Whisk together egg yolk, lemon juice, mustard, water and salt until frothy.
  • Pour avocado oil in slowly while whisking constantly until the mayo begins to thicken. Once this happens you can add the oil in a thin stream, whisking until combined.
  • Keeps fresh for up to a week in the fridge and tastes best within a few days.

Notes

For Chipotle mayo – follow the mayo base recipe instructions above then add in:
  • 1 tsp lime juice 
  • 1 tsp chopped chives
  • 1 tsp garlic powder
  • 1 tbsp adobo sauce
