Healthy Peanut Butter Rice Krispie Bars

Looking for a tasty snack that satisfies your sweet tooth while also being healthier than the store-bought alternatives? Try these healthy treats! With nutritious ingredients and a few simple swaps, you can enjoy a delightful treat that packs a nutritional punch. Here’s why we’re swapping traditional ingredients for healthier options.

Benefits of Swapping Ingredients

  1. Store-bought Rice Krispies treats often contain refined sugars, corn syrup and preservatives. By using Dandy’s marshmallows and natural nut butter, you ensure that your treats are free from artificial additives.
  2. Incorporating flaxseed and hemp seeds boosts the fiber and omega-3 content, making these treats more filling and beneficial for your health.
  3. Feel free to add your favorite mix-ins, like dark chocolate chips or dried fruits, for a yummy twist.

Ingredients

  • 1/4 cup butter (or coconut oil for a dairy-free option)
  • 4 cups brown rice crisps
  • 1 bag Dandy’s marshmallows
  • A splash of maple syrup
  • 1/4 cup organic almond or peanut butter
  • 3 tablespoons ground flaxseed
  • 2 tablespoons hemp seeds

Instructions

  1. Prepare the Pan: Line an 8×8 inch baking dish with parchment paper to facilitate easy removal.
  2. Melt the Base: In a large saucepan, melt the butter (or coconut oil) over low heat. Add the Dandy’s marshmallows and stir continuously until completely melted and gooey.
  3. Combine Ingredients: Once melted, remove from heat. Stir in the almond or peanut butter and a splash of maple syrup until combined. Add the flaxseed and hemp seeds, mixing well.
  4. Add Rice Crisps: Gently fold in the brown rice crisps until fully coated with the marshmallow mixture.
  5. Press into the Pan: Pour the mixture into the prepared baking dish. Press it down firmly and evenly with a spatula or your hands (using parchment paper to prevent sticking).
  6. Chill to Set: Place the dish in the refrigerator for about 30 minutes to allow the treats to firm up.
  7. Cut and Enjoy: Once set, cut into squares or rectangles and enjoy. Store any leftovers in an airtight container for up to a week.

Happy snacking!
