Easy Healthy Fat Balls

These are a nutritious snack choice when you’re looking for something satisfying . Made primarily with nuts and good healthy fats these energy bites can easily accommodate different nut butters if you prefer!

In addition to the nut butter, the combination of chopped nuts and Medjool dates adds a natural sweetness.

Store them in the fridge for an easy grab-and-go snack! Enjoy the wholesome goodness of simple ingredients that fuel your body and satisfy your cravings. Feel free to mix any additional add-in’s like goji berries, pumpkin seeds, sunflower seeds or flax for extra energy and anti-inflammatory boost.

Easy Healthy Fat Balls

Equipment

  • food processor

Ingredients

  • 16 oz jar of almond butter
  • 10 oz nuts (almonds, cashews, pecans, brazil nuts, macadamia)
  • 4 medjool dates (remove pits & disgard)
  • 1-2 tbsp shredded unsweetened coconut flakes
  • 1 tsp vanilla extract
  • 8 oz unsalted butter raw/cultured if possible
  • pinch salt

Instructions

  • First add the dates to a food processor and pulse until finely diced.
  • Then add nuts to the food processor and grind/chop under desired chunkiness
  • Add in the rest of ingredients and blend until combined.
  • Spoon out small balls onto a wax lined cookie sheet.
  • Transfer to the fridge or refrigerator. Refrigerate or freeze for at least an hour prior to serving.
