Superfood Granola with Goji Berries


  • 3 cups gluten free rolled oats
  • 1/2 cup almonds (sliced)
  • 1/2 cup goji berries (soaked)
  • 3/4 cup coconut sugar
  • 1/4 cup coconut oil (melted)
  • 3 tbsp chia seeds
  • 2 tbsp cinnamon
  • 2 tsp salt

  1. Soak goji berries overnight then strain and dry on paper towels

  2. Preheat oven to 300 degrees F

  3. Combine all ingredients except goji berries in a large bowl and mix thoroughly.

  4. Spread evenly in a 1/2 inch layer on a baking sheet and put in oven.

  5. Bake for 15 minutes then stir and return to oven for additional 10 minutes. Continue stirring until granola is golden brown.

  6. Remove from oven and let cool then stir in goji berries.

  7. Allow to cool for 15 minutes and store in a large glass jar.

  8. Serve with coconut milk or yogurt.
