Gluten and grain free flourless paleo hazelnut cookies are the perfect combination of hazelnut and almond buttersloaded with chocolate chunks.

Flourless Hazelnut Cookies

Ingredients

  • 1/4 cup unsalted hazelnuts
  • 3/4 cup hazelnut butter
  • 1/4 cup smooth almond butter
  • 2/3 cup coconut sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3 tbsp unsweetened cacao powder
  • 2 tbsp arrowroot flour
  • 1 tbsp filtered water
  • 1/2 tsp baking soda
  • 4 oz dark chocolate chunks

Instructions

  • Preheat oven to 350F and arrange racks in top and bottom thirds of oven.
  • On a large rimmed baking sheet, place hazelnuts. Bake for 10 to 15 minutes until skins are toasted and slightly blistered. Transfer to a towel and wrap loosely – let steam for 1 minute. Rub hazelnuts in towel to remove skins and discard skins.
  • To a food processor add nut butters, sugar, egg and vanilla. Blend until well combined about 1 minute. Add cocoa powder, arrowroot, water and baking soda. Blend for 30 seconds. Add hazelnuts and pulse 5 or 6 times. Add chocolate chunks and pulse 2 times. Using a tbsp or cookie ball scoop, make 18 balls and arrange 2 inches apart on parchment lined cookie sheets. Press down gently to flatten slightly. Bake in top and bottom thirds of oven, switching trays and rotating halfway until edges just begin to crack about 10 minutes total.
