Vegan Chocolate Cashew Butter Truffles

Servings: 12 balls

Ingredients

Cashew Balls

  • 3/4 cup raw cashew butter no salt added!
  • 2 tbsp maple syrup
  • 1/4 cup organic coconut flour (1-2 extra tbsp to thicken if needed)
  • sprinkle hemp seeds optional

Chocolate Coating

  • 1/2 cup organic raw cacao powder
  • 4 tbsp organic coconut oil
  • 2 tbsp maple syrup

Instructions

  • Line a baking sheet with wax paper
  • Add all ingredients for the cashew balls to a bowl and stir until well combined. Roll into bite size balls.
  • In small saucepan, melt coconut oil then combine remaining ingredients for the chocolate coating.
  • Dip each ball into chocolate coating mixture and place balls on the wax paper. Optional, if using hemp seeds sprinkle over the chocolate balls.
  • Put in freezer for 20 minutes. Best enjoyed when chilled!
