Vegan Chocolate Cashew Butter Truffles
Servings: 12 balls
Ingredients
Cashew Balls
- 3/4 cup raw cashew butter no salt added!
- 2 tbsp maple syrup
- 1/4 cup organic coconut flour (1-2 extra tbsp to thicken if needed)
- sprinkle hemp seeds optional
Chocolate Coating
- 1/2 cup organic raw cacao powder
- 4 tbsp organic coconut oil
- 2 tbsp maple syrup
Instructions
- Line a baking sheet with wax paper
- Add all ingredients for the cashew balls to a bowl and stir until well combined. Roll into bite size balls.
- In small saucepan, melt coconut oil then combine remaining ingredients for the chocolate coating.
- Dip each ball into chocolate coating mixture and place balls on the wax paper. Optional, if using hemp seeds sprinkle over the chocolate balls.
- Put in freezer for 20 minutes. Best enjoyed when chilled!
