Mango Salsa

Ingredients

  • 1 mango diced
  • 2 tbsp chopped scallions
  • 1/2 red bell pepper diced
  • 1 tsp lime juiced
  • 1 tsp olive oil
  • 1/4 red onion finely diced
  • 1 jalapeƱo, seeds removed and minced (optional for heat)
  • 1/2 tsp freshly grated ginger
  • 1 tbsp fresh cilantro finely diced
  • salt

Instructions

  • Pit, peel and dice the mango and bell pepper
  • In a bowl, combine, mango, bell pepper, scallions, lime juice, olive oil and salt to taste.
