Cleaning Eating Turkey Meatloaf

Ingredients

  • 2 tbsp coconut oil or olive oil
  • 3 cloves minced garlic
  • 1 cup finely chopped onion
  • 1.5 lbs ground turkey*
  • 1/2 cup gluten free panko breadcrumbs
  • 3-4 tbsp ground flaxseed
  • 1 egg
  • 1 tbsp coconut aminos
  • 1/4 cup unsweetened ketchup I like primal kitchen the best!
  • 1/2 tsp salt and pepper

Instructions

  • Preheat oven to 350 degrees F
  • Grease a 9x5 loaf pan.
  • Melt oil in a saute pan. Cook onion for about 5 minutes until soft, stirring occasionally. Add garlic and cook for another 2 minutes.
  • Place the cooked onion and garlic in a large bowl to cool for 5 minutes.
  • To the bowl with onion mixture, add turkey, breadcrumbs, flax, egg, aminos, ketchup, and salt and pepper. Mix until well combined (option to use hands).
  • Transfer the mixture to a glass loaf baking dish, pressing gently until the loaf is formed.
  • Bake for 50-55 minutes or until cooked completely through.
  • Slice and serve with sauteed veggies!

Notes

** Sub ground turkey for 1/2 lb ground beef and 1/2 lb pork if desired.
