Preheat your oven to 350 degrees.
Rub coconut oil in your cocotte pans. (I used cast iron cocottes).
Whisk together all the dry ingredients in a medium bowl and set aside.
In a separate bowl add all the wet ingredients (for the cake) and blend using a handheld mixer or Kitchen Aid mixer.
Combine the dry ingredients with the wet ingredients and mix until combined.
Divide the batter up into the 2 pans and bake in the oven for about 20-25 minutes. Let cool before removing from pan.
For the frosting, add all the ingredients to a bowl and blend until smooth.
