Banana Bread Waffles

Ingredients

brown rice flour

tapioca flour

coconut sugar

baking powder

xanthan gum

very ripe bananas
mashed

olive oil

nut milk

walnuts
chopped (optional)
maple syrup
Instructions
Preheat your waffle iron according to directions. Meanwhile preheat oven to 200F.
In a large bowl, combine all the dry ingredients and set aside.
In a medium bowl, combine wet ingredients except maple syrup. Add to dry ingredients and mix until well combined.
Grease waffle iron. Transfer 1/2 cup mixture to waffle iron and cook according to iron directions.

To freeze, store in airtight container with a piece of parchment paper in between each waffle. Freeze for 1 month
