Labor Day is bittersweet because it's the last week of summer where we get to soak up all the feels. Let's make it healthier with this simple side dish that pairs with any BBQ.
White Bean and Avocado Salad Recipe
Ingredients
- 1 avocado (diced )
- 1 medium organic tomato (diced )
- 1 small red onion (chopped )
- 2 tbsp organic apple cider vinegar
- salt and pepper
- 1 16 oz can organic cannellini beans (drained and rinsed )
- 2 tbsp parsley (chopped)
- 2 tbsp avocado oil (or cold pressed olive oil )
Instructions
In a medium bowl, toss the onion, vinegar, salt and pepper.
Meanwhile chop onion and avocado and add to the bowl with beans, parsely and oil.
