Vegan Chocolate Cashew Butter Truffles

Cashew Balls

  • 3/4 cup raw cashew butter (no salt added!)
  • 2 tbsp maple syrup
  • 1/4 cup organic coconut flour ((1-2 extra tbsp to thicken if needed))
  • sprinkle hemp seeds (optional )

Chocolate Coating

  • 1/2 cup organic raw cacao powder
  • 4 tbsp organic coconut oil
  • 2 tbsp maple syrup
  1. Line a baking sheet with wax paper

  2. Add all ingredients for the cashew balls to a bowl and stir until well combined. Roll into bite size balls.

  3. In small saucepan, melt coconut oil then combine remaining ingredients for the chocolate coating.

  4. Dip each ball into chocolate coating mixture and place balls on the wax paper. Optional, if using hemp seeds sprinkle over the chocolate balls.

  5. Put in freezer for 20 minutes. Best enjoyed when chilled!
