Strawberry and Avocado Salad

Servings: 4 servings


  • 1 tbsp lemon juice
  • 1/2 small red onion thinly sliced
  • 2 tbsp apple cider vinegar
  • 1 green onion sliced
  • 2 tsp coconut sugar
  • 1/2 tsp ground mustard
  • 3 tbsp avocado oil
  • 1 tbsp poppy seeds
  • 6 cups organic arugula
  • 1 avocado diced
  • 2 cups strawberries quartered


  • Soak red onion in a small bowl of very cold filtered water for 10 minutes.
  • Meanwhile in a blender make the dressing. Puree the vinegar, lemon juice, green onion and oil until smooth. Season with salt and pepper to taste. Stir in the poppy seeds.
  • Drain and rinse red onion. Pat dry with paper towels. Arrange the arugula on a large serving platter. Scatter onions, avocado and strawberries on top. Drizzle with poppy seed dressing.
