Mini Zucchini Muffins
Mini Zucchini Banana Muffins
Servings: 36 muffins
Ingredients
- 1 1/2 cups oat flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp sea salt
- 2 eggs
- 1/2 cup apple sauce
- 1 ripe banana mashed
- 1 cup zucchini grated
- 1/2 cup butter or coconut oil melted
Instructions
- Preheat oven to 350 degrees
- Add the dry ingredients to a bowl and mix to combine.
- In a seperate bowl mix together the wet ingredients. Slowly add the dry ingredients to the wet and mix until just combined.
- Line a mini muffin pan with liners or grease with coconut oil. Fill until 3/4 way full. Place in the oven and bake for 10-12 minutes.
- Store extra muffins in the freezer – reheat in a toaster oven or thaw overnight in the fridge or on the counter the day you want to eat them.
