Avocado Stuffed with Chipotle Chicken Salad

Ingredients

  • 1/2 cup chipotle peppers in adobe sauce
  • 1 cup shredded chicken
  • 1/4 cup avocado mayonnaise
  • salt and pepper
  • 1/4 cup onions diced
  • 1 cup canned black beans rinsed and drained
  • 1/2 cup salsa verde
  • 2 tbsp fresh cilantro chopped
  • 1/4 cup fresh mint chopped
  • 3 avocados

Instructions

  • Start by dicing the chipotle peppers. Mix all the ingredients in a medium bowl.
  • Halve the avocados and remove the pits. Divide the chicken salad among the avocado halves.
