Grilled Cantaloupe with Feta

Ingredients

  • 1 small cantaloupe
  • 1/4 cup crumbled feta
  • 3 cups organic arugula
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar

Instructions

  • Set grill to medium high heat. Cut cantaloupe in half. With a spoon, scrape out and discard seeds. Cut peel off cantaloupe. Cut each half into 1 inch wide wedges.
  • Grill cantaloupe 2 min. per side until grill marks appear. Remove from grill and place on a paper towel. Let cool slightly.
  • Meanwhile, arrange the arugula and top with cantaloupe wedges. Drizzle the oil and vinegar over cantaloupe. Sprinkle the feta on top. Season with salt to taste.
