Cashew Cream Cheese Frosting
Ingredients
- 1 1/2 cup raw cashews
- 1/4 cup maple syrup
- 1 tbsp apple cider vinegar
- 1/4 cup coconut cream
- 2 tbsp coconut oil
- 1 tsp vanilla
Instructions
- Soak cashews in water overnight or for 4 hours.
- Drain cashews then add to a high speed blender or food processor with rest of ingredients. Blend on high until smooth and silky. Add more vinegar or maple syrup to taste.
- Pour into a mixing bowl and chill in refrigerator for 1 hour. Frosting will harden but will soften at room temperature. If you prefer fluffy frosting, whisk or use a hand mixer to fluff up.
