Banana Bread Waffles
Servings: 6 waffles
Ingredients
- 1 cup brown rice flour
- 3/4 cup tapioca flour
- 2 tbsp coconut sugar
- 2 tsp baking powder
- 1/2 tsp xanthan gum
- 1 1/2 tsp tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp salt
- 2 very ripe bananas mashed
- 1/4 cup olive oil
- 1 tsp vanilla
- 1 1/4 cups nut milk
- 1/3 cup walnuts chopped (optional)
- maple syrup
Instructions
- Preheat your waffle iron according to directions. Meanwhile preheat oven to 200F.
- In a large bowl, combine all the dry ingredients and set aside.
- In a medium bowl, combine wet ingredients except maple syrup. Add to dry ingredients and mix until well combined.
- Grease waffle iron. Transfer 1/2 cup mixture to waffle iron and cook according to iron directions.
Notes
*To freeze, store in airtight container with a piece of parchment paper in between each waffle. Freeze for 1 month
