Banana Bread Waffles

  • 1 cup brown rice flour
  • 3/4 cup tapioca flour
  • 2 tbsp coconut sugar
  • 2 tsp baking powder
  • 1/2 tsp xanthan gum
  • 1 1/2 tsp tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 2 very ripe bananas mashed
  • 1/4 cup olive oil
  • 1 tsp vanilla
  • 1 1/4 cups nut milk
  • 1/3 cup walnuts chopped (optional)
  • maple syrup


  • Preheat your waffle iron according to directions. Meanwhile preheat oven to 200F.
  • In a large bowl, combine all the dry ingredients and set aside.
  • In a medium bowl, combine wet ingredients except maple syrup. Add to dry ingredients and mix until well combined.
  • Grease waffle iron. Transfer 1/2 cup mixture to waffle iron and cook according to iron directions.


*To freeze, store in airtight container with a piece of parchment paper in between each waffle. Freeze for 1 month
