Labor Day is bittersweet because it’s the last week of summer where we get to soak up all the feels. Let’s make it healthier with this simple side dish that pairs with any BBQ.
White Bean and Avocado Salad
- 1 avocado diced
- 1 medium organic tomato diced
- 1 small red onion chopped
- 2 tbsp organic apple cider vinegar
- salt and pepper
- 1 16 oz can organic cannellini beans drained and rinsed
- 2 tbsp parsley chopped
- 2 tbsp avocado oil or cold pressed olive oil
- In a medium bowl, toss the onion, vinegar, salt and pepper.
- Meanwhile chop onion and avocado and add to the bowl with beans, parsely and oil.
