Superfood Granola with Goji Berries

Ingredients

  • 3 cups gluten free rolled oats
  • 1/2 cup almonds sliced
  • 1/2 cup goji berries soaked
  • 3/4 cup coconut sugar
  • 1/4 cup coconut oil melted
  • 3 tbsp chia seeds
  • 2 tbsp cinnamon
  • 2 tsp salt

Instructions

  • Soak goji berries overnight then strain and dry on paper towels
  • Preheat oven to 300 degrees F
  • Combine all ingredients except goji berries in a large bowl and mix thoroughly.
  • Spread evenly in a 1/2 inch layer on a baking sheet and put in oven.
  • Bake for 15 minutes then stir and return to over for additional 10 minutes. Continue stirring until granola is golden brown.
  • Remove from oven and let cool then stir in goji berries.
  • Allow to cool for 15 minutes and store in a large glass jar.
  • Serve with coconut milk or yogurt.
